Happy Pongal!
To those who have no idea what I am on about, Pongal is a celebration of harvest across South India and amongst Hindus of certain regions. During this day, Pongal is made which is literally a rice pudding made with palm sugar known as jaggery. There are several variations of this palm sugar, from palmerah sugar (known as panangkatti), to jaggery which in itself also have a few variations available. The amount of jaggery as well as the type and brand will dictate colour and sweetness of the pudding, so experiment until you find the right one for you.
All these ingredients are available in most South Asian grocery stores and large supermarkets.
Ingredients - for 2/3 people
Rice / Raw Rice x 100g
Mung beans/Moong Daal x25g
Jaggery/Sakkarai/Panangkatti x100/200g depending on taste and preference
Water x200ml
Milk x100ml
Cashew nuts x30g
Raisins x20g
Optional:
Cardamom or any other spices/flavourings of your choice.
