Kumro Patai Rui Paturi is a unique fish recipe made with pumpkin leaves. Rui Macher Paturi is one of the best and tasty recipes from the list of Bengali cuisine. It can be prepared with different varieties of fishes like Rohu, Hilsha, Katla fish, etc. using different ingredients of choice. The word "Paturi" means leaf, in Bengali. Generally Bengalis make paturi using Ilish (hilsa fish), Bhetki (Barramundi fish), Rui (Rohu), Katla and chingri (prawn). The fish is marinated with a spice mix then wrapped with a leaf and then either steamed or shallow fried. Mostly banana leaf is used for making paturi but in this recipe, we will be using pumpkin leaf which gives the recipe a very unique taste.
