Cameron Parry, winemaker at Chateau Montelena in Calistoga, describes how their 100 acres of estate vineyards greatly contribute to the excellent wines produced year after year. Chateau Montelena's vines are predominantly Cabernet Sauvignon, along with some Zinfandel and Primitivo. He attributes the nice ripe flavors, despite an earlier harvest of the Cabernet Sauvignon grapes, to the diversity of soils and Calistoga's specific climate. Picking earlier helps the winery maintain balanced natural acidity, which aids in the wines' structure.
