Masala bhindi is North Indian style preparation of okra or lady fingers (bhindi) which is prepared in slight thick gravy with curd and gram flour.
Recipe
Cut the bhindi into bigger pieces and add a slit in middle
Marinade in turmeric powder
Red chilli powder
Salt
Besan (chana ka aata /gram flour)
Coat the bhindi in this masala
Add water for coating properly
In a kadhai, add mustard oil and fry the masala coated bhindi and take out
In the same kadhai
Add chopped onion
1 TSP cumin seeds
1 TSP red chilli powder
1 TSP Coriander powder
1 spook turmeric powder
Add half TSP dried coriander and saunf
Add chat masala and jeera powder
Add tomato Puree
Cook it till tomatoes are cooked and till gravy leaves oil
Add 2 big spoons of gram flour and mix until there are no lumps
The gravy will now be thick and rich
Add two tbsp curd (room temperature)
Let it cook for 5-10 minutes
Add salt to taste
And ass kasuri methi (dried Fenugreek)
Finally add the fried bhindi, cook it for sometime and add coriander for garnish.
